Only 6 pounds of dough are placed on the baking sheet at a time (each ball is 1/4 cup), then they are flattened and baked until golden. The recipe comes from “Night with Giada: A Quick and Simple Recipe to Improve Dinner” by Giada De Laurentiis, who is also the spokesperson of Food Network.
1. Set the oven to 350 degrees. Line 2 baking sheets with parchment paper. Have a 4-ounce spoon or a 1/4 cup measuring spoon on hand.
2. In a bowl, stir together flour, cinnamon powder, baking powder, baking soda and salt.
3. In a blender equipped with a paddle blender (if there is a blender or a blender), blend the butter, light brown and sugar for 1 minute, or until fluffy. Add eggs and vanilla and stir until smooth. Place the machine in the lowest position, gradually add the flour mixture, and scrape the sides of the bowl as needed.
4. Remove the bowl from the stand of the mixer, then stir in the oats, cranberries and chocolate until added. The dough will become hard and difficult to mix.
5. Use a spoon or small spoon to make a 12-inch slightly rounded 2-inch dough. If any cranberry, chocolate or oatmeal falls on the mound, press it back with your fingers. Place six evenly spaced dough balls on each baking tray. Use your heel to flatten the mound so that it reaches 3 inches evenly.
6. Bake for 15 to 18 minutes, and switch the position of the slices from the back to the front halfway through the baking, or until the biscuits turn light golden. Let the cookies cool on the baking sheet for 20 minutes. Bake the remaining biscuits in the same way. Store in an airtight container.
